Chocolate Mousse Coconut Crusted Pie

Happy the Ultimate Pi Day!!! Being a total nerd myself, I celebrate Pi Day every year, and especially this year.

While I didn’t have a lot of normal pie-baking ingredients in my kitchen today, I decided to go with a Chocolate Mousse Coconut Crusted Pie today. And the good news is that, this pie has healthy, gluten-free, almost dairy-free, and made of only 4 ingredients. I have used this chocolate mousse recipe for the last ten years, and it is hands down the most healthy, simple, and chocolatey.

Here is what you need:

To make the crust:

3 tbsp butter (melted)

1 2/3 cups of unsweetened shredded coconut

To make the chocolate mousse (the filling):

5 oz. dark chocolate

3 large eggs

How to make the pie:

1) Mix coconut and butter together. Press the mixture into a pie plate. You can adjust the thickness depending on how you like it.

2) Bake at 325 degrees F for 10 minutes, or until it is golden brown.

3) Melt chocolate over a double-boiler.

4) Crack the eggs and separate the egg yolks and whites.

5) Remove the melted chocolate from heat and mix in the egg yolks.

6) Beat egg whites with electric beater until fluffy (when you can see soft peaks).

7) Scoop the beaten egg whites over the chocolate mixture. Using a large spoon, carefully and slowly fold the whites into the chocolate.

8) Pour the mousse over the crust and refrigerate for 1-2 hours.

9) Serve with whipped cream, ice cream, fruit, you name it. I sprinkled mine with more shredded coconut.
